Pozdrav raja,

prvo hvala svima koji ucestvuju na ovom forumu jer je ovaj forum i njegovi clanovi najbolji izvor informacija za posao na brodu  :clapping:

Eh ovako, neki dan sam bio u Sarajevu na prelimenarnom interview-u kod agencije Employment Power za Carnival Cruise Lines.

Kao poziciju za koju se prijavljujem sam stavio Bar Waiter, radio sam prije u kaficima pa imam iskustva. Na prelimenarnom sam bio kod gospodina Siniše, na moje iznenadjenje nisam ostao ni 2 min iako su drugi bili od 5-15. Prvo smo pricali na engleskom, pitao me za ovo iskustvo kao konobar te da li znam praviti koktele, ali posto sam radio u manjem objektu s tim nisam imao dodira i tako sam mu i rekao, nakon cega je rekao da za bar waitera ne bih mogao ali za Assistent Waiter-a.
Posto je vidjeo na CV-u da znam njemacki, poceo samnom pricati na njemackom te me pitao odkud znam njemacki, a kada je vidjeo da pricam perfekt pozvao je Andreja te mu objasnio moju situaciju na sto je Andrej rekao da me stavi ipak na poziciju Bar Waitera zbog dobrog poznavanja dva jezika a kao da to za koktele mogu svakako nauciti.

Nakon toga sam isao na Marlins i prosao sa 81% (iako sam ocekivao bolji rezultat) te smo imali pripremu za glavni interview koja je trajala nekoliko sati.

Eh sada dok cekam na glavni interview zanima me za pripremu sta mi preporucujete?

Prvo to za koktele, sta tacno da ucim sta trebam da znam i sta jos pored koktela moram ili bih trebao znati?
Sta da ocekujem, cemu da se nadam i eto opcenito sta jos sve da spremim i naucim do tog interview-a?

Pobrini se da znas te da kazem osnovne,opste poznate koktele,kao sto su Sex on the beach,Martini,Cosmopolitan,Tequila Sunrise itd. naucis bar po 5 komada na bazi vodke,ruma,viskija i ostalih zestina. U tom slucaju naucices bar 30 koktela,sto je dovoljno.
S druge strane uci sve o zestinama i likerima.Kako se prave,od cega i gde.To ce ti sigurno mnogo znaciti,sto na intervjuu,sto u daljem radu.
Sve to ima na netu,prebaci se u google mod i pici  :D
Samo hrabro i nema frke  oT

Evo malo sažeto o koktelima,ostalim pićima i samoj usluzi :)
Ima toga puno ali naučiš od svega pomalo i na konju si :) Nadam se da sam pomogao malo.. SRETNO!

LIST OF SOME BAR TOOLS.
-Can and bottle opener, bar spoons, bottle pourers , lemon squeezers, towel, muddlers, ice pick and chipper, bar strainer, shaker, blander, mixing glasses, knife, cutting board...

HOW WILL YOU SERVE THE GUEST WHO APPEARS INTOXICATED AND WANT ANOTHER DRINK?
-I will refuse service and discretely explain the guest reasons for my action. I will offer him a bottle of water and i will say something like „you don't have to stop enjoying your evening but we cant serve you any more with alcohol, those are the rules“. If there are any future problems with cutting of a customer i will call my supervisor to handle it.

HOW TO DEAL WITH CUSTOMER COMPLAINS?
-I will listen carefully what the customer has to say. I will apologize without blaming someone. I will ask customer what will be acceptable solution for him.
If I can I will solve the problem or i will find someone who can solve it quickly.

WHAT IS GOMME - Gomme or gum syrup is an ingredient commonly used in mixed drinks like bar Syrups.
It is made with big percentage of sugar  but has an added ingredient of gum arabic.
Gum arabic prevents the sugar from crystallization and adds a smooth texture to the drink.

WHAT IS ABV - Abv or alcohol by volumes is a standard measure of how much alcohol is contained in an alcoholic beverage.
It is expressed as a percentage of total volume. It is used worldwide.

WHAT IS ALCOHOL PROOF - Alcohol proof is also measure of how much alcohol is contained in an alcoholic beverage.
In the US alcohol proof is defined as twice the percentage of ABV, like 100proof whiskey contains 50% of alcohol by volume.

WHAT IS SPIRIT - It is term for distilled beverage that consist no added sugar and has at least 20% of alcohol.(GIN,VODKA,RUM,WHISKEY..)

DO YOU KNOW SOMETHING ABOUT UP-SALE?
Up-selling has a lot of benefits. It is good for the customer (better quality Products equals happy customer) it is also god for me(better tips) and finally, it is good for the Bar (extra revenue).
-It is important to talk with the customer. That will allow me to learn what things the customer like. It will help me to turn a small sale into a big one.
It is important to be enthusiastic when you selling something. It is easier to sell something which you are excited about.
Suggest special drinks  and it is good to use words like most popular, fruity, juicy, delicious, icy...than beverages sounds appealing.
 -When customer ordering it is important to suggest him a premium brand of alcohol. Like if he want to drink stronger whiskey suggest him a delicious Jack Daniels Single Barrel (fantastic variation of JD with less sweetness and more power)
-If customer order mixed drinks offer him a choice. Like if he order VOKDKA/MARTINI i will ask him would you like Smirnoff or popular French GreyGrose vodka?

QUALITY SERVICE.
-As an employee it is necessary to provide outstanding service to guests at all times.
Always be friendly, interested and knowledgeable.
Always use words and phrases  such as : Please,  Thank you, May I help you please?, Is there anything else I can do for you?...                                                            
The keys to do excellent service are: Greet passenger warmly. Make a positive impression.Be natural  and be yourself. Be enthusiastic and positive. And always be helpful.
Do everything you can do to meet the guests request or solve the problem immediately.

STEPS IN SERVING A BOTTLE OF WINE.

Give and explain wine card
Make sure there is a glass for everyone who will be drinking wine and make sure you have the proper glasses for the wine (red, white, or sparkling wines require different glasses)
Bring the wine up to the table. Present it to the person who ordered it by standing at his right side  with the label facing them. Present the wine to them.  For example, say  "the 2003 Chianti classico, sir".  This is just so the host can confirm it is the correct one.
Request hosts approval before opening the wine
Hold the bottle in one hand and use your wine key to remove the plastic and cork. Try to take out the cork without it making a sound.
Present the cork to the host.
Pour a small amount into the glass of the host(1,2,3). Twist the bottle when pouring is complete, so there is no dropping and wipe the bottle on your napkin. Let the host test it out to make sure it is OK.
Fill up the glasses of the other guests(1,2,3,4), move clockwise, ladies first. Fill the host's glass last.
If there is any wine left in the bottle, leave it on the edge of the table with the label facing the host. If bottle is empty ask the host would he like to order one more bottle.
Red wine should be served cold only if the guests requests it. Rose,white wine and champagne should be served cold and then placed in an ice bucket with napkin folded over the neck of the bottle.

1.look at the wine-inspect the color,      
2.swirl the wine-release aroma,                                                                                                                                          
3.smell the wine-pick up the aroma,                                                                                                                      
4.taste the wine

Liquor is an distilled alcoholic beverage flavored with fruit, cream, spices, flowers,nuts and bottled with added sugar. Liquors are typically sweet with high level of alcohol.

RUM

BRANDY & COGNAC
Brandy is an alcoholic beverage produced by distilating wine. Generaly contains 35-60% of alcohol. Some brand are aged in woden cask, some are coloured with caramel. It is produced all over the world and it is  typical after dinner drink.The most popular and most famous Brandy is COGNAC. The most common mistake is that people think that each Brandy is Cognac. It is wrong. Cognac is just type of Brandy. Cognac is produced only in Franch region Cognac. RED WINE
Red wine is simpley wine produced by fermentation of dark grapes. Specific of red wines is a substance known as Tanin. Tanin is what gives red wine a complexity.

GIN COCKTAILS – Tahiti ice tea, Martini, Negroni, Long island ice tea

BLODDY MARY- it consist of Vodka(1,5), Tomato juice(3), Lemon juice(0,5), Worcestershire sauce(dash), Tobaco(dash), salt and pepper.                                                                                                              Pour all ingridients into highball glas with ice, stir with spoon and garnish with carrot or celery stalk.

BLUE LAGOON – it consist of Vodka(1,5), Blue curacao(1), lime juice(1), Sprite(3)                                                 
Pour all ingridients into highball glas with ice, stir with spoon and garnish with Lime slice .     

SEX ON THE BEACH – it consist of Vodka(1), peach schnaps(1), orange juice(2), cranbery juice(2) Shake all ingridients with ice and pour into long drink glass. Garnish with orange slice.

COSMOPOLITAN – it consist of vodka(1), triple sec(0,5), lime juice(0,5), cranbery juce(1)                 
Pour all ingridient into shaker. Shake very well and strain into martini glas. Garnish with lime slice.   

CAIPIROSKA – it consist of vodka(2), lime juice(1), 10g sugar, lime(cut in 4 pieces), crushed ice     
Mash  lime and sugar with muddler in old fashion highball glas. Add crushed ice,pour vodka and lime juce and stir with spoon.Garnish with lime and 2 strows.

BLACK RUSSIAN – it consist of vodka(2), coffe liquer Kahlua(1)                                                                 
Pour ingridients into old fashioned glass filed with ice and stir gently.

WHITE RUSSIAN - it consist of vodka(2), coffe liquer Kahlua(1), cream(1)                                                                 
Pour vodka and liquer into old fashioned glass filed with ice and stir gentlyn. Top up with cream.

CAIPIRINHA – cachaca-brazil rum(1,5), lime juice(0,5), Lime(4 pieces), 10g sugar                                                 
Mash lime and sugar with muddler in old fashion highball glas. Add crushed ice,pour cachaca and lime juce and stir with spoon.Garnish with 2 strows.

DAIQUIRI – light rum(1,5), lime juice(0,5), sugar syrup(0,5)                                                                     
Shake together with ice and strain into chilled martini glass. Garnish with lime.

BAHAMA MAMA – white rum(1), Dark rum(1), coconat rum-malibu(1), orange juice(2), pineaple juice(1), grenadine syrup(0,5)                                                                                                                            Shake together with ice and pour into Hurricane-Colada glas.Dash of grenadine on top.Garnish with orange or pineaple slice.
   
MOJITO –white rum(1,5), lime juice(1), 10g sugar, lime(4 pieces), 6 leaves of mint, soda                 
Mash lime juice,sugar,mint leaves and lime with muddler in highball glass.Add ice,pour rum and soda and stir with spoon.Garnish with mint leaves and straw.

ZOMBIE – white rum(1), dark rum(1), gold rum(1), apricot brandy(1), pineaple juice(2), proof rum   
Shake together with ice and pour into highball glas. Dash of proof rom on top. Garnish with pineaple.

HURRICANE – white rum(1), dark rum(1), proof rum(0,5), orange juice(2), pineaple juice(2), grenadine syrup(0,5), crushed ice                                                                                                                 Shake together with crushed ice and pour into Hurricane-Colada glass.Garnish with pineaple slic.   

MAI TAI – white rum(1), dark rum(1), apricot liquer(0,5), amareto liquer(0,5), grenadine syrup(0,5), lime juice(0,5), pineaple juice(2)                                                                                                                   Shake together with ice and pour into highball glass. Garnish with pineaple slice.     
 
CUBA LIBRE – white rum(1,5), lime(4 pieces), sweet&sour mix(1), coca cola                                                 
Pour rum and sweet mix in highball glas filed with lime and ice. Stir with spoon and fill with cola.Garnish with lime sliceand straw.

PINA COLADA – white rum-malibu(1), coconat cream(1), pineaple juice(3)                                         
Shake together with ice and pour into Hurricane –Colada glas. Garnish with pineaple slice.

MARGARITA – tequila(1,5), triple sec (1), lime juice(0,5)                                                                             
Rub the rim of the martini/margarita glass with lime to make the salt stick to it.Shake all ingredients with ice and cerefully strain into the glas. Garnish with lime slice.

TEQUILA SUNRISE – tequila(1,5), grenadine syrup(0,5), orange juice(3)                                               
Shake tequila and juice with ice and pour into highball glas.Add the grenadine syrup in the centar which will sink to tho bottom.Garnish with orange slice.

LONG ISLAND ICE TEA – tequila(0,5), vodka(0,5), Rum(0,5), gin(0,5), triple sec(0,5) sweet&sour mix(1), coca cola                                                                                                                                                 Pour all ingredients over ice into highball glas.Stir with spoon and fill up with coke.Garnish with lime.

TAHITI ICE TEA – tequila(0,5), gin(0,5), vodka(0,5), white rum(0,5), lime juice(0,5), grenadine syrup(0,5), orange juice(2), pineaple juice(2)                                                                                                    Shake together with ice and pour into highball glas.Garnish with pineaple slice.   

MARTINI – gin/vodka(2), vermouth(0,5), olive or lime                                                                           
Pour all ingredients into shaker with ice, stir very well and strain into a chilled martini glas. If guest wants ON THE ROCKS pour all ingredients over ice into old fashioned glass.

NEGRONI – gin(1), campari(1), vermouth roso(1)                                                                       
Pour all ingredients  directly into old fashioned glas over ice.Stir shortly with spoon and garnish with orange slice directly in glass.

MIMOSA/BUCKS FIZZ – orange juice(3) champagne(2)                                                                                             
Pour the juice into Champagne glaas and top up with Champagne.Stir gently.

ROSSINI – sparkling wine(3), fresh strawbery juice(1,5)                                                                             
Pour juice into chilled Champagne glas and gently add Sparkling wine. Stir gently.

BELLINI – sparkling wine(3), fresh peach juice(1,5)                                                                                                 
Pour juice into chilled Champagne glas and gently add Sparkling wine. Stir gently.

B52 – coffe liquer kahlua(0,3), baileys(0,3), triple sec(0,3) dash of proof rum                                               
Strain all ingredients into a shooter glass. 
   
ORGASAM – peach liquer(0,6), baileys(0,3), dash of grenadine syrup                                                             
Strain all ingredients into a shooter glass.   

GRASSHOPPER – cacao white liquer(1), menthe green liquer(1), cream(1)                                                         
Shake together and strain into martini glas.

AMARETO SOUR – amareto liquer(1,5), sweet&sour mix(1,5)                                                                     
Shake with ice and pour into old fashiond glass.Rub the rim of the glass with orange slice.Garnish with orange and shery directly in glass.

HAWAIIAN – coconut liquer(1),blue curacao(0,5),banana liquer(0,5), orange juice(2), pineaple juice(2)
Shake with ice and pour into Hurricane-Colada glass.Garnish with pineaple slice.

MANHATTAN – rye whiskey-canadian club(1,5), vermouth roso(1) dash of angostura bitter.
Pour all ingredients into shaker over ice.Stir well and strain into a chilled martini glas. Garnish with one maraschino cherry directly in glas.

WHISKEY SOUR – bourbon whiskey (1,5), lemon juice(1), sweet&sourmix(1,5) or gomme  syrup     
Shake and strain into ice filled old fashioned glass. Serve with orange slice and maraschino cherry.

STINGER – brandy(1,5), white mentha cream(1)                                                                                         
 Pour the ingrediants into old fashionad glass with crushed ice.     

ALEXANDER- cognac(1), cacao white liquer(1), cream(1)                                                                                               
Shake with ice and strain into a martini glass. Sprinkle nutmeg on  top.


DIFFERENCE BETWEEN BLACK AND WHITE RUSSIAN.
-Black russian is a cocktail of vodka and coffe liquer KAHLUA. A way of preparing is to pour all ingridients into the old fashioned glass filed with ice and at the end to stir gently. If you want to make White russian do the same thing like in black russian just at the end gently top up with cream. So the cream is the difference between black and white russian.

WHAT QUASTION DO YOU ASK WHEN SOMEONE ORDERS A MARTINI?
If someone orders martini withuot providing any other informations there is definitly a few things that I need to ask to make sure that i deliver just what they want.
1.up or on the rocks, 2.shaken or stirt, 3.gin or vodka, 4.with or without olives, 5.dry or sweet(How much vermouth.extra dry means very little)

WHAT QUASTION DO YOU ASK WHEN SOMEONE ORDERS A MARGARITA?
1.Frozen or on the rocks, 2.salt or without salt, 3.do you like any particular kind of tequila

AFTER DINER DRINKS/DIGESTIVE                                                                                                                                   
After diners drinks are alcoholic beverages served after a meal, with coffe, dessert. Thay are usually sweeter and creamy  like cocktails (Russian, Stinger, Grasshoper,Alexander), Brandy&Cognac, Dessert wines, sweet or bitter Liquers (Drambuie, Grand Mariner, Kahlua, Baileys)
