-I will refuse service and discretely explain the guest reasons for my action. I will offer him a bottle of water and i will say something like „you don't have to stop enjoying your evening but we cant serve you any more with alcohol, those are the rules“. If there are any future problems with cutting of a customer i will call my supervisor to handle it.
HOW TO DEAL WITH CUSTOMER COMPLAINS?
-I will listen carefully what the customer has to say. I will apologize without blaming someone. I will ask customer what will be acceptable solution for him.
If I can I will solve the problem or i will find someone who can solve it quickly.
WHAT IS GOMME - Gomme or gum syrup is an ingredient commonly used in mixed drinks like bar Syrups.
It is made with big percentage of sugar but has an added ingredient of gum arabic.
Gum arabic prevents the sugar from crystallization and adds a smooth texture to the drink.
WHAT IS ABV - Abv or alcohol by volumes is a standard measure of how much alcohol is contained in an alcoholic beverage.
It is expressed as a percentage of total volume. It is used worldwide.
WHAT IS ALCOHOL PROOF - Alcohol proof is also measure of how much alcohol is contained in an alcoholic beverage.
In the US alcohol proof is defined as twice the percentage of ABV, like 100proof whiskey contains 50% of alcohol by volume.
WHAT IS SPIRIT - It is term for distilled beverage that consist no added sugar and has at least 20% of alcohol.(GIN,VODKA,RUM,WHISKEY..)
DO YOU KNOW SOMETHING ABOUT UP-SALE?
Up-selling has a lot of benefits. It is good for the customer (better quality Products equals happy customer) it is also god for me(better tips) and finally, it is good for the Bar (extra revenue).
-It is important to talk with the customer. That will allow me to learn what things the customer like. It will help me to turn a small sale into a big one.
It is important to be enthusiastic when you selling something. It is easier to sell something which you are excited about.
Suggest special drinks and it is good to use words like most popular, fruity, juicy, delicious, icy...than beverages sounds appealing.
-When customer ordering it is important to suggest him a premium brand of alcohol. Like if he want to drink stronger whiskey suggest him a delicious Jack Daniels Single Barrel (fantastic variation of JD with less sweetness and more power)
-If customer order mixed drinks offer him a choice. Like if he order VOKDKA/MARTINI i will ask him would you like Smirnoff or popular French GreyGrose vodka?
QUALITY SERVICE.
-As an employee it is necessary to provide outstanding service to guests at all times.
Always be friendly, interested and knowledgeable.
Always use words and phrases such as : Please, Thank you, May I help you please?, Is there anything else I can do for you?...
The keys to do excellent service are: Greet passenger warmly. Make a positive impression.Be natural and be yourself. Be enthusiastic and positive. And always be helpful.
Do everything you can do to meet the guests request or solve the problem immediately.
STEPS IN SERVING A BOTTLE OF WINE.
Give and explain wine card
Make sure there is a glass for everyone who will be drinking wine and make sure you have the proper glasses for the wine (red, white, or sparkling wines require different glasses)
Bring the wine up to the table. Present it to the person who ordered it by standing at his right side with the label facing them. Present the wine to them. For example, say "the 2003 Chianti classico, sir". This is just so the host can confirm it is the correct one.
Request hosts approval before opening the wine
Hold the bottle in one hand and use your wine key to remove the plastic and cork. Try to take out the cork without it making a sound.
Present the cork to the host.
Pour a small amount into the glass of the host(1,2,3). Twist the bottle when pouring is complete, so there is no dropping and wipe the bottle on your napkin. Let the host test it out to make sure it is OK.
Fill up the glasses of the other guests(1,2,3,4), move clockwise, ladies first. Fill the host's glass last.
If there is any wine left in the bottle, leave it on the edge of the table with the label facing the host. If bottle is empty ask the host would he like to order one more bottle.
Red wine should be served cold only if the guests requests it. Rose,white wine and champagne should be served cold and then placed in an ice bucket with napkin folded over the neck of the bottle.
